Whatcom Roundup: Four potential new restaurants; downtown shop closing

Here’s a weekly roundup of the latest retail and restaurant activity around Whatcom County:

New pie and cocktail bar planned

A unique restaurant could be coming permanently to downtown Bellingham.

Pie Bar, a “craft cocktail & pie dessert bar” with a location in Seattle and a touring food truck, has teased a permanent location in downtown Bellingham, along with a food truck pop-up coming soon, according to a July 14 Facebook post.

“Bellingham ... a secret is glowing right under the rocket. I am staking my claim. The pink beacon of Pie Bar has officially landed. Fresh off our incredible run as an official food truck vendor for the FIFA World Cup, we are bringing that massive energy straight to you. We came from the World Cup, and now we are putting down our roots in Whatcom County forever,” the Facebook post states.

The food truck is teased to park near downtown Bellingham’s silver rocket sculpture at 306 W Holly St. in front of the former Rocket Donuts on July 24-25.

“Next weekend — on Friday and Saturday night — if you look carefully around the base of the iconic silver rocket, you’ll find our signature pink Pie Bar food truck plugged in and serving up our sweet legendary slices you’ve been waiting for. I simply could not wait another minute to bring the heart and hustle of Pie Bar to this spot. Come find us. This is our new home,” the post states.

The post also teases a new Pie Dive location.

“But this truck is just the very first spark. COMING LATE FALL: Pie Bar After Dark — ‘The Rose Room,’” the post states. No operating hours for the food truck or new location have been announced.

A new Jersey Mike’s Subs chain restaurant has been proposed in Bellingham, according to a building permit application filed July 6 for 330 36th St., the previous location of Massage Envy in the Sehome Village shopping center. The permit application had not been approved as of July 10, records show.

Welcome Road closing party

Welcome Road Winery, a coffee shop and winery which operates locations in West Seattle and Bellingham, is closing its downtown Bellingham location on Saturday, July 18, with a final closing party, according to an email from the shop’s owner and manager, Linda Sabee.

“We’ll have deep discounts on every bottle of wine with a clear-the-stacks countdown! Enjoy complimentary baked goods by Linda and live music in the evening. It’s going to be a bang of a party all day Saturday to celebrate the 5 years of fun we’ve had serving you award-winning wine and artisan coffee,” Sabee said.

Welcome Road Winery will be open from noon to 8 p.m. Saturday, July 18 at 300 W. Champion St.

“Welcome Road will still be open and pouring wine at our West Seattle location, and we’ll keep you posted where to buy our wines in Bellingham,” Sabee said.

Marta’s Deli opens in Lynden

Marta’s Cocina, a Mexican restaurant in downtown Lynden, is now Marta’s Deli, a new restaurant endeavor by the same owners, serving a new menu and a new inside look, according to a July 15 Facebook post.

The new menu includes smoothies, coffee and teas, as well as pastas, sandwiches, salads, breakfast bagels, pies and more. This month, during the restaurant’s soft opening, the restaurant is offering 20% off all purchases and will be open from 7 a.m. to 4 p.m. Monday through Saturday at 1710 Front St. in Lynden.

New ice cream shop proposed

A new ice cream shop may be coming to the Cordata Place shopping center. A building permit application was filed for an “Ice cream shop in restaurant space” under the name “Flores” on July 8 for 4151 Meridian St., Suite 106, near Burlington Coat Factory. The permit application had not been approved as of July 10.
