Whatcom County restaurant scene saw one newcomer, one closure announcement in January
There hasn’t been much of a shakeup in the Whatcom County restaurant scene the last few months, including just a few development in January.
No new restaurants opened in Bellingham last month, though Whatcom County did welcome one new eatery — Chispita de Sabor in Suma. No restaurants closed their doors, but the owners of longtime downtown Bellingham staple Bayou on Bay announced an upcoming closure.
In November, Bellingham welcomed three new restaurants as two closed. Throughout December, no new restaurants opened, and three closed their doors.
Chispita de Sabor
Suma’s first drive-through taqueria, Chispita de Sabor, opened for business Saturday, Jan. 25. The restaurant previously operated as a food truck but has opened a brick-and-mortar restaurant serving a variety of tacos, tamales, quesabirria, taquitos and more.
Chispita de Sabor is open from 8 a.m. to 8 p.m. at 719 Cherry St. in Sumas, according to an social media post.
Bayou on Bay
Bayou on Bay, a Creole, Cajun and Southern restaurant and bar, announced it will be closing permanently in March through a social media post on Tuesday, Jan. 14.
“It’s with a full heart and a mix of emotions that I share this news with our cherished community: after nearly 18 years, we will be closing our doors following Mardi Gras on March 4, 2025,” the post states.
Bayou on Bay is open from 3 to 9 p.m. Thursday, 3 to 10 p.m. Friday, 10 a.m. to 10 p.m. Saturday, and 10 a.m. to 7 p.m. Sunday at 1300 Bay St. in Bellingham.
