Everson eatery picks spot to expand in downtown Bellingham, hopes to open this spring

Here’s a roundup of retail activity around Whatcom County:

Good To Go Meat Pies is coming to Bellingham, but in a different space. Owner Holly Bevan-Bumford announced in a news release that they will be opening 1306 Commercial St., near the Quinn & Foster clothing store.

Bevan-Bumford said in an email she hopes to be open later this spring, offering local farm-to-table ingredients for its Cornish pasty. Soups, salads and sweets are also on the menu. Once open downtown, the hours will be 10 a.m. to 7 p.m. Tuesday through Sunday, closed Monday.

Good To Go Meat Pies was originally slated to go into the Granary Building, but Bevan-Bumford opted for the downtown location because she wanted to get established in Bellingham sooner than the Granary could offer. She remains interested in eventually having a waterfront/market space.

Along with the original Everson space that was established in 2012, Good To Go Meat Pies is also regularly at the Bellingham and Everett farmers markets.

Evolve Chocolate announced on Facebook that it is expanding, opening a second location in the Hotel Leo building in downtown Bellingham. The company also has a cafe in the Village Books building in Fairhaven.

Declaring Monday, March 2, National Egg McMuffin Day, McDonald’s is giving away Egg McMuffins from 6 a.m. from to 10:30 a.m. at participating restaurants. Customers just need to download McDonald’s mobile App to get a free Egg McMuffin. There are seven McDonald’s restaurants in Whatcom County.

Forte Chocolates recently closed its shop at Bellis Fair. The shop, which opened near the JC Penney wing in 2017, is locally owned and maintains a store and production kitchen in Mount Vernon.
