These Bellingham eateries have cheeses that are almost too Gouda to be true
Cheese comes in all shapes, sizes and flavors. It can and should be used in a variety of culinary creations.
It is made through a masterful craft of precise chemistry, copious amounts of knowledge and a whole lot of time (a couple of weeks or months depending on the cheese).
It also helps if cheese making runs in your family!
Bellingham is lucky enough to have a variety of local businesses creating handcrafted, specialty cheeses, as well as restaurants and breweries that include them on their food menus.
Visit the cheesemakers, try some new types of cheese and share some mac and yease (the vegan version of mac and cheese) or a grilled cheese over a beer.
Here are a couple of ways to enjoy cheese in the area:
Samish Bay Cheese
Samish Bay Cheese is a certified organic farmstead located in Bow. Go visit their tasting room at 15115 Bow Hill Road, where you’ll find a full menu of goodies to try. Have a cheese board, cheesecake or one of everything.

If you have extra time on your hands and want to go straight to the source of the cheese making near Bellingham, Appel Farms and Twin Sisters Creamery are gold mines for local cheese.
Twin Sisters Brewing Company
Twin Sisters Brewing Company, located at 500 Carolina Street, offers a classic grilled cheese sandwich that never disappoints.
The sandwich is the perfect combination of different cheeses with an option to add pulled pork (made in house). It’s served with house made condiments, such as beer cheese and tomato jam, that take this grilled cheese to the next level.
Their new menu rolled out Monday, Nov. 11 — you will have to check out the newly-updated grilled cheese and new to the menu truffle mac and yease, that has everyone talking.
Old World Deli
This European-style delicatessen, located at 1228 North State Street, is an excellent place to get an assortment of cheeses and everything to go along with it (including wine).
If you get hungry , you can enjoy something off of their menu — they have daily specials and sandwiches that are paired with bread from BreadFarm.
Another amazing thing about Old World Deli is they do catering — from sandwich box lunches to meat and cheese boards that are great for parties or the holiday season.
