Whatcom Roundup: Chipotle opening, food truck moves, new jiu-jitsu studio
Here’s our weekly roundup of the latest retail and restaurant activity around Whatcom County:
Lynden Chipotle opening
Lynden’s new Chipotle restaurant is officially opening Tuesday, February 17, according to a news release from the national chain of Mexican restaurants.
The restaurant will feature a “Chipotlane,” a drive-through exclusively for picking up online orders. The new Chipotle is currently hiring, and the chain generally employs about 30 positions at each location.
The restaurant will be open 10:45 a.m. to 10 p.m. daily at 8083 Guide Meridian Rd. in Lynden.
Food truck moving
Simmering Tava, a popular food truck serving home-style Indian food, has moved from its regular spot at Kulshan Brewing and will now be located at Menace Brewing in Bellingham. The business announced the move in a Feb. 9 social media post.
Simmering Tava will be at Menace Brewing at 2529 Meridian St. for lunch and dinner Wednesday through Sunday, and at Beach Cat Brewing at 1010 C St. Suite 107 in Bellingham on Tuesdays. Readers can also expect to see a second Simmering Tava truck at Kulshan Brewing’s Trackside location and Barkley Village throughout the summer.
New jiu-jitsu studio
A new jiu-jitsu studio is planned for Bellingham, as “Endurance Jiu-Jitsu” ownership has filed a building permit application for 4151 Meridian St. Suite 116, near Larrabee Lager Company in the Cordata Place shopping center. The application, filed Feb. 4, had not been approved as of Feb. 6.
