New bistro opens, savory bakery moves, June events and activities revisited
Here’s a roundup of the latest retail and restaurant activity in and around Whatcom County:
Holly’s Meat Pies moves
Holly’s Meat Pies, a pasty savory hand pie restaurant in Bellingham has changed locations after closing down its previous location on May 21.
The new location is still being completed, but customers can still purchase Holly’s delicious pies by ordering online or walking in store to pick up frozen pies to bake at home. Holly’s Meat Pies is open from 11 a.m. to 6 p.m. Thursday through Saturday at 4073 Hannegan Road Suite J, and plans to expand hours and operations once the new location is completed.
Bellingham chefs start new restaurant
Chef Christy and Shannon Fox of Evolve Chocolate + Cafe in Bellingham are co-owning a new restaurant in Bow, the Persimmon Bistro. The Bellingham duo teamed up with the owners of Bow Sanctuary to open the new bistro on Sunday, June 4. The bistro’s menu includes dishes such as espresso and tea, granola bowls, paninis, salads and avocado beet toast.
Persimmon Bistro will be open from 9 a.m. to 3 p.m. Wednesday through Sunday and is at 3533 Chuckanut Dr. in Bow.
Garden restoration and design
Eco-Restore Consulting & Design LLC, a King County gardening and design company, has expanded to the Bellingham area, offering residential garden design that follows “organic and regenerative gardening with a broader social responsibility component,” according to an email from the company.

New brewery a bit closer to opening
Larrabee Lager Company, a new brewery coming to Bellingham in summer 2023 has posted another update on its “finishing touches” before it opens.
No opening date has been announced yet, but the brewery will be at 4151 Meridian St.
Midweek farmers market on pause
The Bellingham Farmers Market announced on May 18 that it will no longer host midweek markets on Wednesdays during 2023.
“Although we have had much enthusiasm for the Wednesday market over its 20-plus-year history, this has not translated to the purchases we need to build the vibrant, bustling and sustainable market we want to see,” the announcement stated.
“If you want to see a future mid-week market succeed, keep shopping at the Saturday farmers market!”
The Bellingham Farmers Market is open from 10 a.m. to 2 p.m. every Saturday through the third week of December at 1100 Railroad Ave.
