This new grocery store is opening in downtown Bellingham and it’s focused on vegan products
A new vegan grocery store is ready to open in downtown Bellingham.
V Go’s Bellingham is planning to fully open on Saturday, Feb. 12, at 1213 Cornwall Ave. It is currently in a soft-opening phase, with the cafe portion serving food from the Sage Against The Machine food truck menu. The store/cafe will also feature local art and handcrafted items, with profits from those sales going to local nonprofit animal organizations.
Tara Folenius-Johnson, who owns the business with Nate Johnson, said in an email that the goal is to offer vegan products that are not available elsewhere in Bellingham. Folenius-Johnson said they could not compete with big box store prices, so they buy direct from small, independent vegan-owned companies across the U.S. Examples of some local products in the 3,200-square-foot store/cafe include Pangea Ferments Sauerkraut and Kimchi, Thorough Fare Tempeh, LEAP Nut Butters, Bright and Sunny Ginger Beer and Kombucha Town.
The cafe will eventually have a new menu, while the food truck will continue traveling around the area, going to events and farmers markets.
Once fully open, store and cafe hours will be 11 a.m. to 7 p.m. Monday through Thursday, open an hour later on Friday and Saturday and noon to 6 p.m. on Sunday. The plan is to eventually start opening at 9 a.m. for breakfast.
