Here’s your weekly roundup of the latest retail, business and restaurant activity in and around Whatcom County:

New restaurant opening in Walmart

Just Poke, a poke bowl restaurant with locations across Washington, has filed a building permit with the city of Bellingham for a new location at 4420 Meridian St., inside Walmart’s superstore. The permit was filed Oct. 16 and had not been approved as of Oct. 18.

New cafe opens in downtown Bellingham

Sweet Bay Cafe, the sister restaurant to the newly opened Red Star Taco restaurant opened its doors on Monday, Oct. 21.

Sweet Bay Cafe will have a full-service coffee counter and serve breakfast, brunch and lunch options such as biscuits and gravy, French toast, a “monty cristo,” eggs Benedict, fried chicken sandwiches, smash burgers, smoothies, mac and cheese and even alcoholic breakfast drinks.

The coffee counter will be open from 7 a.m. to 2 p.m. daily, and the full restaurant will be open from 8 a.m. to 2 p.m. daily at the same location as Red Star Taco Bar at 1327 N State St. in Bellingham.
