Ready for some BBQ? Jack’s announces opening date for Bellingham restaurant

It’s nearly time to crank up the barbecue smokers in downtown Bellingham.

Jack’s BBQ announced plans to open its Bellingham restaurant on Friday, April 8. It will be in the former Copper Hog space at 1327 N. State St. and will be the fifth restaurant for the company.

The Bellingham restaurant will have a full menu similar to its Seattle-area sister restaurants. Meats will be sold by the pound, side dishes available by the quart. Menu items include the “Whatabrisket” burger, pork ribs, sausage, pulled pork and chicken. The meat will be cooked on the two 18-foot barbecue smokers that are at the restaurant.

Jack’s also will have a bar with 12 beers on tap, wine and cocktails. An outdoor patio will be available seasonally.

Once open, Jack’s BBQ Bellingham will serve breakfast tacos Tuesday through Sunday 8-11 a.m., with regular menu service between 11 am and 8 pm. A late night menu will be featured 8-10 p.m. Thursday through Saturday nights including Central Texas delicacies, such as brisket nachos, barbecue tacos and barbecue/Tex-Mex mashups.

Founded in 2014, Jack’s has steadily grown in the Seattle area, with restaurants in the SoDo and the South Lake Union neighborhoods as well as in Seattle’s Columbia Tower and Algona. According to a December 2020 article in the Tacoma News Tribune, owner Jack Timmons is a native Texan who moved to Seattle to work at Boeing and Microsoft before trying his hand in the restaurant business.

According to the article, Timmons’ mission is simple: offer “friendly, laid-back, really good barbecue, really good Southern comfort, Southern hospitality.”
