These popular Bellingham eateries are reopening as COVID restrictions ease

Here’s a roundup of recent retail activity around Whatcom County:

As the COVID-19 pandemic situation seems to improve, more local eating establishments are reopening. The most recent announcements include the Colophon Cafe in Fairhaven, Black Drop Coffeehouse and Crossroads Sports Bar.

The Colophon Cafe is reopening on Sunday, March 14, according to a Facebook post. Once it reopens, it will serve brunch and dinner Thursday through Monday and be closed Tuesday and Wednesday.

The Black Drop Coffeehouse in downtown Bellingham is aiming for an early April reopening and will add new breakfast items to its menu. Details and updates can be found on its Facebook page.

Crossroads Sports Bar reopened on Wednesday, March 10. Crossroads is at 1263 Barkley Blvd., near Lowe’s Home Improvement, offering dinner Tuesday through Friday and lunch/dinner on the weekend.

The Bellingham Farmers Market is gearing up for its latest season, which kicks off Saturday, April 3.

The market, which is at the Depot Market Square at 1100 Railroad Ave., will have some pandemic restrictions in place, including wearing a face mask and social distancing. All food purchased at the market must be taken to-go, it can’t be eaten on-site, according to a Facebook announcement.

Industrial Credit Union has purchased a building at 1980 Kok Road in Lynden and will be moving its Lynden branch into it later this spring.

The new spot is in the Lynden Towne Plaza, across the street from its current location. The new facility will have two drive-up lanes, an ATM and additional office space, according to a news release.

The new food truck Carve Casual will have a grand opening on Wednesday, March 17, at its regular spot at Kulshan’s K2 brewery at 1538 Kentucky St. Once open, its menu will include rotisserie chicken, paninis and poutine. It will start with dinner service, adding lunch on Tuesday, March 23, according to a news release from Kulshan Brewing.
