Time for Waffles in Paradise; these other Whatcom businesses prepare for COVID-19 Phase 2

As Whatcom County businesses gear up for Phase 2 of the state’s “Healthy Washington — Roadmap to Recovery Plan” on Feb. 14-15, here are some updates on what some are doing:

The Bagelry plans to not offer indoor dining until its staff is vaccinated, co-owner Terra Seaton said in an email. In the meantime, they plan to continue the recently revamped walk-up system, which she said has been very popular.

“We are hopeful that we will be able to invite folks back into the dining room by late spring or early summer and we are very much looking forward to seeing all of our regulars again when it’s safe,” Seaton said.

Along with bagels, The Bagelry also brought back its soup menu on Friday, Feb. 12.

Elizabeth Station is bringing back its tent to offer outdoor seating. The tent was taken down earlier when the COVID-19 numbers were higher.

Fairhaven’s Colophon Cafe will remain closed through the end of February, according to its Facebook page.

Businesses announcing on social media that they are opening with indoor services at 25% capacity in accordance with the Phase 2 rules include: Black Forest Steakhouse in Blaine (opening Friday, Feb. 19), Park Bowl, Mt. Baker Lanes, Bourbon Bar & Grill in Everson, Lynden Skateway, Ihop, Mi Mexico, Dirty Dan Harris, Coconut Kenny’s, Lighthouse Bar & Grill, Busara, Arlis’s Restaurant, Fireside Martini and Wine Bar (opening Wednesday, Feb. 17), Web Locker, Muto Izakaya, Mambo Italiano Cafe and Storia Cucina.

In other restaurant activity in Whatcom County:

Waffles in Paradise’s menu draws on ideas from European countries but is made with locally sourced ingredients, according to a news release from owner Inga Elvrom.

The grand opening for Waffles in Paradise is 3-7 p.m. on Thursday, March 25. The Rebel Artists of Whatcom Market is at the Commercial Street Plaza, which is near the entrance to the Commercial Street Parking Garage at 1300 Commercial St.

After the grand opening, Waffles in Paradise will be open at the plaza every Thursday and on Art Walk days, which are the first Friday evenings of the month.
