Recipe Exchange: Sweet cucumber relish a family favorite

Kolby Williams of Bellingham shares his award-winning sweet cucumber relish recipe with us.

Williams says the relish is special to him because his great-grandma Burnette taught his mom how to make it, and his mom taught him how to make it.

“I have entered it into the Lynden fair the last two years in the 4-H division and both years I have received special awards for it. Grandma has been making this since the early ‘60s and she is still making it at 91 years old,” Williams said.

The hardest part of preparing this dish, he says, is remembering to have ice in your freezer. He suggest writing “ice” in big letters at the top of your recipe card to avoid being caught without a crucial element.
