Step inside downtown Bellingham’s new gluten-free bakery, opened by 3 sisters
A new gluten-free, celiac-safe bakery has opened in downtown Bellingham. Sisters and co-owners Chloe Vogel, Clara Dwyer and Aemilia Vogel on Jan. 3 opened Millet Bakery, which is Bellingham’s only exclusively gluten-free bakery since Avellino Bakery closed last year.
“We saw an opportunity to step in and build something intentional, inclusive and long-lasting,” the team wrote in an email to The Bellingham Herald.
“Our sister, Clara, has celiac disease, so gluten-free food has always been personal to us. We wanted to fill the void for truly safe, high-quality gluten-free baked goods that don’t feel like a compromise. Almost everyone knows someone who is celiac or gluten-sensitive, yet most gluten-free options are smaller, drier, or treated as an afterthought. Our goal is to make food that’s safe and carefully made for the gluten-free community, but so good that anyone would choose it. Inclusive eating matters to us — we want families and friends to all enjoy the same food together,” the team said.
The bakery offers more than a few options, serving doughnuts, cheesecake, bagels, pretzels, breads, cinnamon rolls, cookies, muffins, pita breads, pizzas, scones, Danish pastries and more rotating items, as well as seasonal specialties.
“Visitors can expect a fully gluten-free bakery focused on classic comfort baked goods done well. Our portions are intentionally generous, our products are made fresh, and we focus on soft textures, structure, and flavor. Alongside familiar favorites, we also introduce seasonal and creative flavors,” the team said.
“Our aim is to raise expectations for what gluten-free baking can be, not just for those who need it, but for anyone who loves good bread and pastries,” the team said.
The bakery does not offer indoor seating, but invites guests to drop in, choose their favorite pastries, breads and treats, and take them home to enjoy. Wholesale orders are also available.
“In addition to our retail offerings, Millet Bakery also supplies gluten-free baked goods wholesale to grocery stores, cafés and restaurants, and we welcome inquiries from businesses interested in starting a wholesale partnership,” the team said.
The bakery is open from 8 a.m. to 2 p.m. Saturday and Sunday — with plans to expand hours soon — at 2500 Cornwall Ave. in downtown Bellingham, the previous location of Avellino Gluten Free Bakery.
