New restaurant planned for downtown Bellingham delays opening during search for new location

A unique restaurant planned to open a new location in Bellingham will now be opening later than planned.

Pie Dive Bar, a bar serving pies, cocktails, wine and cider in a dive-bar setting, currently has a location in Snohomish and Gold Bar, and filed a permit for a Bellingham location back in 2023.

The new location was planned for downtown Bellingham at 15 Prospect St., but the shop’s CEO “had to back out of the space on Holly because the lease terms and build out were outrageous,” Alyssa Kingsbery, CEO and co-founder of Pie Dive Bar, told The Bellingham Herald.

“Bellingham is next. My dream is to be in Bellingham. I just need to find a location that’s the right fit. In the meantime we’re getting closer,” Kingsbery said.

Pie Dive Bar is opening another location in La Conner in summer 2025.

“We are opening a Pie Dive Bar in La Conner in the heart of downtown where the old Lighthouse restaurant used to be eons ago. The bar side of the restaurant has been vacant for over a decade. I was looking for another space that fit our concept and then La Conner popped up,” Kingsbery said.

No opening date has been announced, but the new location will be at 512 1st St. in La Conner.

The unique bar and restaurant serves dishes like brisket mac and cheese, Cajun gumbo pie, shepherd’s pie, cherry crumble pie, chocolate bourbon pecan pie, peanut butter and jelly pie, and other classic sweet and savory pie flavors.

While snacking on rich pie, guests can also enjoy a classic old fashioned, lavender vodka lemonade, passionfruit margarita, bourbon peach tea, rosemary mule, wine and beer, as well as nonalcoholic drinks.

Pie Dive Bar in Snohomish is open from 3 to 9 p.m. Tuesday through Thursday, 3 p.m. to midnight Friday, noon to midnight Saturday and noon to 8 p.m. Sunday at 921 First St.

Pie Dive Bar in Gold Bar is open from noon to 8 p.m. Monday, noon to 9 p.m. Thursday, noon to 10 p.m. Friday and Saturday and noon to 8 p.m. Sunday at 201 Croft Avenue.
