Bellingham welcomed one new restaurant this month, offering vegan and gluten-free meals

Every month, The Bellingham Herald looks at the new restaurants that opened in Whatcom County.

While four new restaurants opened in March, only one opened during the month of April, bringing vegan and gluten-free dishes to Whatcom County.

The Fat Beet, situated where Quantum Leaf, a vegan and gluten-free restaurant used to be located, had its grand opening on Friday, April 14 after a soft opening on April 7. The restaurant opened after the owners of Quantum Leaf sold the building and recipes to Talia Sorinsin-Allen and Melissa Sorinsin, a mother-daughter team.

The Sorinsins purchased the restaurant and decided to change its name, although they still serve some of Quantum Leaf’s original menu items along with new recipes.

“The loss of another vegan restaurant in Bellingham was going to be a blow to many others as well and we felt the opportunity to keep this important niche open for the community was important. We hope to create the same sense of relief for many others by creating healthy, yummy vegan foods. Between Talia’s restaurant experience and Melissa’s business experience, we hope to be a power team capable of creating something amazing downtown,” Talia Sorinsin-Allen wrote in an email to The Herald.

The Fat Beet is a “100% vegan contemporary casual eatery,” according to its Facebook page, and serves dishes such as avocado toast, vegan sushi rolls, beet and unami rice bowls and chocolate mousse.

The Fat Beet is open from 11 a.m. to 8 p.m. Friday through Sunday and is at 1149 N. State St.
