Structures Brewing opens second location in Old Town. Here’s what to expect
A Bellingham brewery is celebrating the opening of its second location.
Structures Brewing plans to open its newly remodeled space on Saturday, March 11, at 601 W. Holly St. in the former location of Chuckanut Brewery in Old Town.
Structures co-owners James Alexander and Bryan Cardwell spent the last year completely renovating the building after purchasing it in 2022.
New additions
“It was super cozy in here but we had this vision to gut it,” Alexander said in an interview with The Bellingham Herald.
They put in a long bar directly attached to an outside draft system to keep the beer as cold as possible. They also put in a brand-new kitchen and garage-door windows to open up the space.
The new brewery is much larger than the original location at 1420 N. State St. It will welcome customers of all ages and feature indoor and outdoor seating plus serve food.
“Our menu is super concise,” Alexander said. “The whole ethos of the menu and the space is efficiency and hospitality.”
The brewery will serve fried chicken sandwiches, house-made potato chips, hamburgers, house-made veggie burgers and vegan Impossible Burgers.
“Because the space is so big and dynamic, we’ll have pretty affordable prices — $6.50 burgers,” Alexander said.
The new location will be open seven days a week from 11:30 a.m. to 11 p.m. The kitchen will close every day at 10 p.m.
Phase II
The back half of the new location will open on April 20, as part of “Phase II,” according to Alexander.
An outdoor bar space that is entirely self-contained will serve as a beer garden. It features the same direct draw draft system as in the main bar area in the front of the building.
It’s still under construction but will seat about 100 people when it’s complete.
“It’ll be great too because it’s all self-isolated so if you or a friend is having a wedding reception, we’ll be able to have that as an event space without disturbing the service in the front,” Alexander said.
State Street remodel
The original Structures location closed temporarily on Thursday, March 9, to undergo a light remodel that is expected to take a few weeks.
“We’re just going to spruce it up — some better lighting and other odds and ends,” Alexander told The Herald.
The original location will remain as a space for people 21 years and older.
“Being able to give two dynamic spaces for people will be pretty awesome,” Alexander said.
