These two businesses opened this month in Whatcom County, bringing regional specialties
Bellingham and Whatcom County have a wide range of restaurants, breweries and food trucks and whether you are craving pub fare, Italian food or sushi, there seems to be something for everyone to try. In December alone, two new businesses opened in Whatcom County, including a brewery and Mexican restaurant.
Here are Whatcom County’s newest food stops that opened this month.
Darach Brewing Company
Darach Brewing Company opened on Dec. 10 and is Bellingham’s newest brewery. Darach is Gaelic for “oak,” as many of its brews spend time in oak barrels before being released. Visitors can also enjoy lagers, ciders and wine, as well as non-alcoholic drinks.
“We are focused on farmhouse-style ales specializing in mixed fermentation and spontaneous ales. Currently, we have a mixture of saison, pale ales, a raw ale, and a porter on tap expanding into more tart ales as we have more time to brew and age beer,” Emily Nichols, co-owner of Darach Brewing wrote in an email.
The brewery is kid and dog friendly, and although it does not have a kitchen, outdoor food is allowed to be brought in.
Darach Brewing Company is open from 4-9 p.m. Monday and Thursday, from 4-10 p.m. Friday, from noon to 10 p.m. on Saturday and from noon to 8 p.m. on Sunday, and is located at 1015 N. State St.
Birrieria Tijuana
Bellingham locals highly anticipated Birrieria Tijuana on Facebook as the Mexican restaurant chain teased the opening of its Bellingham location for months.
The restaurant was supposed to open in September but was delayed due to permit issues, according to previous reporting by The Bellingham Herald.
The Bellingham restaurant had its grand opening on Dec. 12 and has five other Washington locations in Everett, Federal Way, Lakewood, Burien and Spokane. Visitors can enjoy dishes such as tacos, chilaquiles, nachos and churros.
Birrieria Tijuana is open from 9 a.m. to 9 p.m. daily and is at 3040 Northwest Ave. in Bellingham.
