A new downtown Bellingham restaurant is aiming for a July 23 grand opening
A new restaurant and bar in downtown Bellingham has announced its grand opening will be Saturday, July 23.
Penny Farthing is opening inside the Chuckanut Bay Distillery at 1311 Cornwall Ave. Once open, hours are 4-9 p.m. Sunday, Tuesday, Wednesday, Thursday, open an hour late on Friday and Saturday and closed on Monday.
The dinner menu will be a shareable plate concept said co-owner Kelly Andrews. Much of the menu will be produced through Wood Stone ovens. Options include filet mignon medallions, smoked salmon rillettes and roasted cauliflower steak.
Cocktails will also be a big feature of Penny Farthing, featuring many spirits from Chuckanut Distillery. Wine, beer and cider are also available.
The restaurant and bar is part of what has been a long remodeling project process for the building, which is more than 100 years old and once home to JC Penney. The process began in 2017 that included a major remodel that led to the installation of the distillery. With the bar and restaurant in place, the next step is putting in event spaces as well as possibly a rooftop bar.
