The Union Coffee Shop is planning on opening its second downtown cafe on Wednesday, April 15.
The company is opening a cafe at 1203 N. State St., in the former Koi Cafe spot. Along with offering Bellingham-based Tony’s Coffee, the cafe will have its own pastries, including scones, muffins and cinnamon rolls. Once open, cafe hours will be from 7:30 a.m. to 6 p.m., said Elena Van Kregten, head baker and general manager of Union Coffee. Once they get settled, the cafe may add sandwiches and soups to the menu.
Van Kregten said they’ve done well at the Crown Plaza building at 114 W. Magnolia St. and believes the second cafe will be a convenient spot for those who need something on the go or who want to hang out. The manager at the second location will be Riley White-Brainard.
