These restaurants launched or shuttered in May in Whatcom County

Looking for a new restaurant to try out? Here are the three new Whatcom County eatery that opened in May and one that closed permanently.

New Whatcom County restaurants

Pendino

Pendino, a craft cocktail bar serving specialty Neopolitan pizza, held its grand opening Tuesday, May 12, after a soft opening May 6-8.

The new restaurant took over the previous location of Starla’s, which closed in March. It is run by Corey Silversmith, previous co-owner of Makeworth Coffee in downtown Bellingham, according to an April 1 post on Starla’s Instagram.

“The Pendino name comes from my great-grandfather — from Naples, Italy — where restaurants weren’t just places to eat, but places to stay. Where conversations stretched longer than expected. Where strangers became friends. Where time softened around the table,” a March 4 Instagram post states on Pendino’s profile.

Pendino’s is open to all ages from 4 to 9 p.m. Tuesday through Thursday and 4 to 10 p.m. Friday and Saturday at 1149 N State St. in downtown Bellingham, inside the historic Herald Building.

Rustic Bar & Grill

Rustic Bar and Grill opened its doors in Lynden on Wednesday, May 13, bringing a “diverse selection of exquisite dishes and beverages” to Whatcom County, according to the restaurant’s website.

The restaurant serves burgers, steaks, soups, salads, seafood, ribs, desserts and offers a full kids menu.

The menu includes whiskey crab soup, baked lobster dip, beef brisket mac and cheese, seafood scampi, prime rib, tiramisu, affogato and Danish apple trifle.

The craft cocktail menu features a drink called the “Cowgirl Blush” that is made with whiskey, simple syrup, egg white and lemon juice, as well as a “Pink Pony Cosmo” with raspberry vodka, Cointreau, club soda, lime and cranberry juice.

Rustic Bar and Grill is open from 11 a.m. to 9 p.m. daily at 8155 Guide Meridian Rd. in Lynden. It is connected to the Cobblestone Hotel & Suites.

Can Am Pizza

Can Am Pizza, a chain restaurant with multiple locations in Washington and Texas, opened its seventh Washington location in Bellingham on Monday, May 18.

The restaurant serves a variety of pizzas, as well as wings, calzones, oven baked sub sandwiches, pastas, gyros, salads and more.

The menu features a chicken bacon ranch baked sub, butter chicken pizza, Korean chili wings, fettuccine shrimp pasta and a taco supreme pizza. For dessert, the restaurant also serves an 8-inch chocolate chip pizza cookie.

The restaurant is open from 11 a.m. to 11 p.m. daily at 1251 Lincoln St Suite 106, in Bellingham, near Fred Meyer and Whole Foods Market.

Closed Whatcom County restaurants

Woods Coffee

Woods Coffee closed its Railroad Avenue location May 31, according to an email from Natalie Moon, a member of the chain’s guest experience team.

“Ultimately, the location was no longer economically sustainable due to steadily rising operating costs combined with a sustained decline in foot traffic in the area over recent years,” Moon told The Herald.

At this time, there are no plans for Woods to relocate or add another downtown Bellingham location, according to Moon.

The downtown Bellingham location was at 1135 Railroad Ave.
