Bellingham’s Chipotle aiming for Nov. 15 opening

Chipotle Mexican Grill will officially open at Bellis Fair at 10 a.m. Saturday, Nov. 15.

That’s the word from Bellis Fair General Manager Rene Morris. The opening date has shifted a few times in recent weeks as the company finishes construction on the 2,536-square-foot space in the area formerly home to the Bellis Fair movie theater.

The restaurant, known for its burritos, tacos and its efforts to use organic ingredients, will be near the food court.

Bellis Fair continues to make significant changes following its major remodel that was completed last fall. Along with Chipotle and the closure of the movie theater, clothing retailer H&M opened earlier this year and Buffalo Wild Wings opened last month. Designer Shoe Warehouse is scheduled to open in 2015 in the final empty space in the former movie theater area.
