Coming soon: These 8 new restaurants are planning openings in Whatcom County

Whatcom County has a wide variety of local restaurants, nationwide chains and niche eateries.

Here’s what we know about a handful of new restaurants that are in the process of opening soon:

Chick-fil-A in Bellingham

Chick-fil-A is currently under construction in Bellingham for its long-awaited restaurant. The construction site has been gated off and the restaurant building is already visible at 4030 Cordata Parkway, near Bellis Fair mall.

The new restaurant still does not have an opening date, but the permits for the project were issued back in August with an estimated cost of $1,016,359.08, for the dual drive-through, 4,989-square-foot building.

Bandidos Cocina & Tequila in Bellingham

Bandidos Cocina & Tequila, a new Mexican restaurant, is planned to take over the previous location of Taco Lobo in downtown Bellingham.

The new restaurant operators filed a permit application to the city for the new restaurant back in February. A sign announcing the new restaurant is visible at 117 W Magnolia St.

No opening date has been announced.

Dutch Bros coffee in Bellingham

The city of Bellingham is reviewing a pre-application for a Dutch Bros coffee drive-through, according to the city’s permit tracking system. The proposal calls for a 986-square-foot coffee shop with no seating at 4015 Cordata Parkway near Bellis Fair mall.

Sourdough & Co. in Bellingham

New chain restaurant Sourdough & Co. is planned for Sunset Square at 1145 E Sunset Dr. Suite 125 after a building permit application was approved April 1.

The new soup, salad and sandwich restaurant is now listed on the chain’s website. No opening date has been announced, but the website states that job applications will open soon.

Kebabji in Bellingham

A new restaurant, Kebabji, is planning to open soon in Bellis Fair mall, serving rotisserie roasted meats and more. No official opening date has been announced, but the restaurant is making progress toward its retail space, according to a recent Bellis Fair mall social media post.

The restaurant was expected to open in the mall’s food court in “October or November,” Bellis Fair mall general manager David Prince told The Bellingham Herald last month.

Tacos Guadalajara in Fairhaven

Tacos Guadalajara, a new Mexican restaurant, is planning to take over the previous location of Jalapeno’s Mexican Restaurant at 1007 Harris Ave. in Bellingham’s Fairhaven neighborhood.

This will be the second Tacos Guadalajara in Whatcom County. The restaurant has another location in Ferndale. No opening date for the new restaurant has been announced.

Ginger Fusion & Bar in Lynden

Ginger Fusion & Bar is expected to open at 8874 Bender Road in Lynden.

Owners have not announced an official opening date, but Ginger The Indian Cuisine’s Instagram page teased the opening back in September.

Frankie’s Deli in Bellingham

A building permit application was filed for a new deli restaurant in Bellingham called Frankie’s Deli. The permit was filed for 2517 Meridian St., the previous location of Junior Flooring & Construction LLC.

The application was filed Sept. 30 and was approved Oct. 31.
