New breakfast eatery opens in Bellingham’s Sunnyland neighborhood

A new breakfast place opened on Thursday, April 30 near Trader Joe’s that might remind you of mom’s cooking.

Over Easy opened at 2430 James St. Hours are 6:30 a.m. to 1 p.m. Monday through Friday, 6:30 a.m. to 2 p.m. on Saturday and Sunday.

I’ll have a more detailed story in my Sunday retail column, but here are some tidbits:

-- The Bellingham Over Easy is the first one to open outside Arizona. There are four Over Easy restaurants in Arizona.

-- One of Over Easy’s Arizona locations was featured on the Food Network television show “Diners, Drive-Ins and Dives.” Here’s the link to the episode.

-- Over Easy founder Brad May designed the chairs and tables to be like his mother’s kitchen.

-- Menu items include chicken fried steak, waffles, pancakes, several types of Eggs Benedict and caramelized banana pecan french toast.
