Molasses Cookies

Annetta Small of Bellingham also shared her molasses cookie recipe, saying she likes them because they are a soft molasses cookie with a strong spice flavor.

MOLASSES COOKIES

Ingredients

3/4 cup margarine

1 cup sugar plus more for dipping

1 egg

1/2 teaspoon salt

1/4 cup molasses

2 teaspoons baking soda

1 teaspoon cloves

1 teaspoon ginger

1 teaspoon cinnamon

2-21/2 cups flour

Directions

Cream together first four ingredients.

Add molasses, soda and spices.

Add flour gradually and mix well.

Chill dough if desired as dough will be very soft.

Roll dough into small balls and dip in sugar. Do not flatten as they will spread while baking.

Bake at 350 degrees for about 8 minutes.
