Double Butterscotch Pistachio Bars

Adele Lloyd of Bellingham sent us this "double delicious" recipe.

DOUBLE BUTTERSCOTCH PISTACHIO BARS

Ingredients

1 cup and 2 tablespoons unsalted butter, at room temperature

23/4 cups firmly packed dark brown sugar

11/2 teaspoons vanilla extract

3 eggs

3 cups all-purpose flour

11/2 teaspoons baking powder

3/4 teaspoon baking soda

1/2 teaspoon salt

1 1/3 cups butterscotch chips

3/4 cup whole pistachios

Directions

Lightly grease 10- by 15-inch baking pan.

In a large bowl, cream together butter and sugar.

Mix in vanilla extract and eggs until well blended.

In another bowl, stir together flour, baking powder, baking soda and salt.

Add to butter mixture and mix until well blended.

Stir in butterscotch chips and pistachios.

Spread evenly in pan.

Bake at 350 degrees for 20-25 minutes or until set and lightly browned.

Cool and cut into 11/2-inch squares.
