Cheesecake Delight Bars

RoseMae Bork of Bellingham says these cookies keep well in the refrigerator. She says she doubles the recipe for the holidays as they're good for exchanges and gifts.



1/3 cup butter

1/3 cup brown sugar

1 cup flour

1/2 cup chopped walnuts

1/4 cup sugar

1 8-ounce package cream cheese

1 egg

2 tablespoon milk or cream

1 tablespoon lemon juice

1/2 teaspoon vanilla


Preheat oven to 350 degrees.

Cream together butter with brown sugar; add flour and nuts.

Reserve 1 cup of nut mixture.

Press remaining mixture in the bottom of an 8- by 8-inch pan and bake 12 minutes until brown.

Blend sugar and cream cheese, beat in egg, milk, lemon juice and vanilla.

Mix well and spread over crust.

Return to oven for 25 minutes.

Cool, cut in 30 squares.

Decorate, if you wish, with a decorator tube using cream cheese frosting tinted red or green.
