Small Pecan Tassies

Carolyn Blakeway of Lynden says this is an easy and delectable treat that was shared with her by a fellow Puget Power employee in the 1960s.

SMALL PECAN TASSIES

Ingredients for cookies

2-3 ounces cream cheese at room temperature

1 cup butter at room temperature

2 cups flour

Ingredients for filling

2 eggs, beaten

11/2 cup brown sugar

2 tablespoons melted butter

1/8 teaspoon salt

1/4 teaspoon vanilla

1 cup chopped pecans

Directions

Blend cream cheese and butter with a wooden spoon.

Add flour and stir to make dough.

Roll or use a melon baller to form dough into walnut-size balls. Press dough balls into small muffin or tart pan with a floured pestle or your thumb.

Mix filling ingredients and place in dough well.

Bake at 350 degrees for 25-27 minutes.

Makes about 4 dozen.
