Yum - Yum

Holiday scents for many include the sweet smell of cookies baking in the oven. Bellingham Herald readers share these recipes and the family memories that go along with them.


Barbara Hollinsworth of Ferndale was first introduced to this recipe in December of 1957 while visiting her future mother-in-law, who said the recipe was handed down from her mother. Fifty-two years later, Hollinsworth says she still makes this recipe during the holidays for her children and grandchildren.


11/4 cups plus 1 tablespoon flour

1/2 cup butter

2 eggs

11/2 cups plus 1 teaspoon brown sugar

1/2 cup chopped walnuts

1/2 cup shredded coconut

1 teaspoon vanilla

1/4 teaspoon salt


Heat oven to 350 degrees.

Mix 11/4 cups flour, butter and 1 teaspoon brown sugar.

Press evenly into 9x9 baking pan.

Mix together eggs, 11/2 cups brown sugar, 1 tablespoon flour, walnuts, coconut, vanilla and salt.

Pour batter on top of bottom layer.

Bake until brown. HOW LONG.

Cool and cut into bars.

Makes 16.
