With the annual Bite of Skagit coming up Saturday, July 26, today's trio of recipes come from staff members at Northcoast Credit Union, which is hosting the annual event at Swinomish Casino in Anacortes.
The event benefits the Skagit Food Distribution Center with funds raised going to buy produce from local farmers for food banks and meals on wheels programs. Last year it raised $25,000.
Lyn Fontaine, a member services representative at the North Coast Credit Union Bellingham branch, shares her recipe for lumpia, or Chinese spring rolls. She says she doesn't make this as often as she'd like because it's a little time-consuming. But adds, "everyone loves it!"
Sedro-Woolley Branch Manager Irene Millay offers up a a summer Greek Salad recipe and Sheila Hart, a member services representative who works out of the Mount Vernon branch, shares her recipe for Hamburger Soup.
1 pound ground pork
1 pouch Mama Sita's Fried Spring Roll (Lumpiang Shanghai) Seasoning Mix
1 1/4 cup carrots, shredded
1 cup onions, shredded
2 tablespoons spring onions, finely chopped
1 egg, beaten
45 pieces 8-inch lumpia wrapper
1 egg white, beaten
1/2 cup flour
1 cup cooking oil
In a bowl, combine ground pork with 1 pouch Mama Sita's Fried Spring Roll Seasoning (Lumpiang Shanghai) Mix, carrots, onions, spring onions and beaten egg. Mix well.
Scoop one tablespoon of the mixture onto a medium-sized spring roll wrapper and roll tightly.
Seal the edges with water or egg whites.
Cut in half and dip both ends in some flour.
Fry in hot cooking oil until golden brown and drain.
Serve with Mama Sita's Sweet Chili Sauce or Mama Sita's Bottled Sweet and Sour.
Makes 90 pieces
1 pound hamburger
1/2 cup minced onion
3 cups tomato juice
1 cup water
2 cans cream of celery soup
1/2 teaspoon marjoram
1/4 teaspoon pepper
1 teaspoon garlic salt
1 teaspoon sugar
1 bay leaf
2 cups shredded carrots
Mix all ingredients but the carrots in a pan and cook on stove top for 1/2 hour or longer.
Then add 2 cups shredded carrots and cook 20 minutes longer.
SUMMER GREEK SALAD
4 medium-sized tomatoes, cut into chunks
1 English cucumber, cut into chunks
1 small red onion, cut into chunks (or less, to your taste)
1 green pepper, cut into chunks (or less, to your taste)
1 12-ounce or 16-ounce can of black olives or Greek olives
6 oounces crumbled feta cheese
1 big clove of garlic. minced
3/4 teaspoon salt
Dash of pepper
1/2 cup olive oil (or 1/3 cup to taste)
4 tablespoons red vinegar wine
1 pinch dried oregano
Juice of one lemon
Dash of sugar, 1/4 teaspoon or more to taste
Mix salad ingredients except the feta, set aside to rest.
Combine dressing ingredients.
Drain juices from salad, then add feta cheese and toss with salad dressing.
