Kathy Rodak of Bellingham says she has been making these cookies for more than 20 years. She says her father whipped up a big batch for a Christmas potluck at work and was absolutely inundated with requests for the recipe.
COOKIES WITH CHOW MEIN NOODLES AND PEANUTS
One package of crispy chow mein noodles
Never miss a local story.
One jar or can of salted peanuts (shelled, and you can leave the skins on if you wish)
One package of semisweet chocolate morsels
One package of butterscotch morsels
Line a work surface with several sheets of wax paper.
Mix noodles and peanuts in a bowl.
Melt chocolate and butterscotch together on top of a double boiler.
Stir often while the morsels are melting.
When all morsels are melted, pour over dry ingredients and stir together very quickly.
Scoop mixture out onto wax paper in little mounds and let harden.
