Name: The C Shop.
What it makes: Starting about 10 weeks before Easter, The C Shop is closed to the public so staff can focus on making chocolate. The business makes 100 or more kinds of chocolate and candy items for Easter, including eggs and bunnies, melted and molded from Guittard Chocolate Company chocolate. It carries three blends: semisweet, dark and milk chocolate.
Volume: No official number is available, but co-owner Pat Alesse said the shop makes thousands of chocolate treats in those 10 weeks.
Marketplace: Mostly in Whatcom County, but The C Shop delivers all along the Interstate 5 corridor. The business’ candy is sold at local stores, including Haggen grocery stores and the Community Food Co-op in Bellingham.
Production process: Chocolate is melted in a 100-pound tank and held at a constant temperature for further use. From there it is pumped and measured out to fill molds. The chocolate is put on a vibrating table to get rid of bubbles and inconsistencies, and molds are rotated by hand for cooling. After cooling, the chocolate is popped out of the molds, wrapped in layered cellophane, and distributed.
Ownership: Family-owned by Pat and Pat Alesse since 1971.
Workforce: For the Easter season, about six.
Business news: The business’ candy shop is open this weekend and March 21- 22. Summer and cafe hours begin on weekends from Mother’s Day to Father’s Day, and are daily from Father’s Day to Labor Day. The store will have an Easter egg hunt across the street from its Birch Bay shop, from 2 to 4 p.m. March 22.
