Best Bites: Top cool treat spots for summer in Whatcom County

Summer in the Northwest is a funny thing. It could be gloomy and rainy one day and gloriously sunny the next.

On the few days when it gets full-on summery and temperatures skyrocket into the - gasp - 80s, you're going to want something tasty to cool you down.

Fortunately, Whatcom County has plenty of options when it comes to ice cream. Here's the scoop:

Mallard Ice Cream

You can't talk about ice cream in Bellingham without mentioning Mallard, a beacon of handmade ice cream downtown. Sure, they've got traditional flavors like chocolate, cookies and cream, and strawberry nailed, but where they really excel is creativity. Rhubarb ice or vanilla black pepper, anyone?

The C Shop

Cap off your stroll down the beach at Birch Bay with a cool cone from The C Shop. The shop features a rotating variety of ice cream flavors from Cascade Glacier. Relive your childhood with a scoop of bright blue bubblegum and eat it before it melts in the beachy sunshine.

Sirena Gelato

If you want a slightly lighter take on ice cream, try these gelatos and sorbets made locally from traditional Italian recipes. You can't go wrong with chocolate and hazelnut, but for something refreshing on a hot day you might want to give the lemon and raspberry sorbets a try.

Acme Ice Cream

This thick, creamy ice cream is made in small batches in Acme, so it doesn't have to travel far to get from the farm to your cone. With flavors like espresso made from local coffee and blueberries and cream made from local fruit, you really can't go wrong. Pints are available in some local stores, or get it by the scoop at Rocket Donuts.
