New Whatcom County restaurant offers Mexican, Asian and Italian dishes

A new restaurant on Hinote's Corner may help solve the common debate among family members who can't decide what type of food they want.

Infusion Cuisine recently opened in the former Cassoulet space at 6912 Hannegan Road, near the Pole Road intersection, offering Mexican, Asian and Italian dishes six days a week. It's a family-run business with Eduardo Diego handling the cooking duties.

Diego learned his craft working for 17 years in San Diego restaurants. His wife, Yesenia Pulido, and daughter Rachel Diego also work at the restaurant, along with family members Steven Arroyo and Olivier Arroyo.

Diego said he enjoys trying out different techniques while cooking and wants to bring different slices of culture into the restaurant. He also noted that not many restaurants are in that area, so he wants to offer a bit of variety for those who live nearby. It is also a chance to settle the debate among customers who can't decide what type of restaurant they want to go to for an evening out.

The variety on the menu includes kung pao, creamy pistachio penne pasta and chile relleno, focusing on local ingredients. The restaurant has a completely different look from the previous establishment.

The goal is to be a family-friendly restaurant, with both sit-down and takeout service. The restaurant currently offers lunch and dinner but later this month is planning to offer breakfast.

NEW GYM OPENS IN BELLINGHAM

Local fitness trainer Londa Bosch has opened EveryBody's Gym in the former Paper Zone space at 923 Iowa St. in Bellingham.

The gym will focus on small group sessions as well as one-on-one personal training, according to a company news release. The gym will have no machines and no mirrors, with classes focusing on strength and cardiovascular workouts.

Labels Women's Consignment Store recently hit a milestone of signing its 30,000th consignor for its two Bellingham stores. Along with sellers from Whatcom County, the company attracts consignors from British Columbia and counties to the south. Labels has a store on James Street, near Trader Joe's, and Northwest Avenue, near Interstate 5.

-- Home Skillet has filed a permit to build an additional prep room and bathroom at 521 Kentucky St.

-- A permit was filed to convert the Melody Hall building into motel and apartment units. The hall is at 4071 Home Road, near Northwest Avenue.

-- A demolition permit was filed for an apartment/office building at 3963 Primrose Lane.

-- A liquor license application was filed for a new restaurant to go into 7876 Birch Bay Drive, formerly home to Bobby's Dry Dock. The proposed new name is Birch Bay Restaurant and Lounge and the applicant is Karen Winborn.

-- A new restaurant has opened in the former Poor Siamese Café space on 1213 Dupont St. It's called Nok's Thai Cuisine. According to its Facebook page, the restaurant opened April 26, offering a variety of Thai dishes.

-- An eatery called Big Orange has filed permits to go into Bellis Fair. According to the permit, it'll offer sandwiches and snacks.

-- Bellingham's Fitness Gear & Training is celebrating its 25th anniversary with prizes as well as donations to the Wounded Warrior Project and Bellingham Food Bank. The celebration runs through Saturday, May 31, at its new facility at 1605 N. State St., near Village Lighting. A portion of sales will be donated to the Wounded Warrior Project, which serves wounded veterans and service members.
