Sarah's Oatmeal Cookies


Carole McMains-Donaldson of Lynden, Sarah's step-mom, says Sarah makes these every year around the holidays (and any time she can be bribed) for her dad, who is Bellingham Herald Online Editor Jim Donaldson. Carole says these are Jim's favorite cookie and his daughter is the only one who can make them quite the right way.



11/2 cup sugar

1/2 cup applesauce

1 teaspoon vanilla

2 eggs

1/4 cup oil

2 cups flour

1 teaspoon baking soda

1/2 teaspoon cinnamon

1/2 teaspoon baking powder

1/2 teaspoon salt

3 cups rolled oats

Milk (in case dough seems too thick)

1 cup chocolate chips


Mix together sugar, applesauce, vanilla, eggs and oil.

Mix together flour, baking soda, cinnamon, baking powder, salt, rolled oats.

Mix wet and dry ingredients and add a little milk if the dough seems too thick.

Stir in chocolate chips.

Drop onto ungreased cookie sheet and bake at 375 degrees for 8 to 10 minutes.
